Clean the potatoes. Put a potato in-between the handles of 2 wooden spoons. Make slices every 5 mm, making sure not to cut all the way through the potato. Place the potatoes in an ovenproof dish and brush with olive oil. Season with pepper and salt.

Bake the potatoes for 20 minutes in the pizza oven at 220 °C. Remove the dish from the oven and brush again with olive oil and herbs. Put some chorizo in-between some slices and bake in the oven for another 20-30 minutes. Cooking times can differ based on the type and size of the potato.

Serve with meat or fish.
